Because of its high water content, cooked zucchini can turn to mush easily. Salt the sliced vegetable for 30 minutes (then rinse and dry) to release some water, then dice it. Get your fry pan really hot and saute the cubes in olive oil for just a few minutes or until they're bright green. Add them to 1 cup cooked orzo (rice-shaped pasta) dressed with a drizzle of olive oil and lemon juice, chopped basil, and a generous sprinkle of salt and pepper.
