Yellow Squash Casserole
Ingredients
- 2 lbs. yellow squash
- 1/2 cup chopped green pepper
- 3 Tbs. butter, melted (remember to trust the cow and not the chemist! )
- 1 1/2 cups cheddar cheese, grated
- 2/3 cup chopped onion
- 2 Tbs. sugar
- salt and pepper, to taste
- 2 eggs, beaten (I add sugar here and mix)
- 12 saltine crackers. crumbled
Instructions
Cook squash, onion and pepper until done. Drain well, push pretty much of the water out. Mash. (by the time you push the water out you don't really need to mash) Put in bowl, add eggs, cheese, salt, pepper, butter and crushed crackers. Mix well.
Use a 2 qt. buttered or sprayed baking dish. Bake at 350 for 20-25 min

I made this for Thanksgiving one year and it is now a "must have" on our Thanskgiving menu. The green pepper really does something for this recipe!
