White Fruit Cake

Ingredients

Instructions

cream together in very large bowl
3 1/4 c. flour
1 lb. soft butter

cream together in another smaller bowl
2 c. sugar
12 egg yolks (save whites for later)

add to sugar and egg mixture:
1 tsp. nutmeg
4 tsps. vanilla
Then mix all the above together.


add:
1/2 lb. chopped candied red cherries
1 lb. chopped candied pineapple
1 lb. chopped walnuts
1 lb. white raisins

Mix all together, best to use clean hand.

Beat the reserved 12 egg whites until peaks form. Fold into the batter.

Prepare your loaf pans. Use 4 8 1/2 x 4 1/2 or use 3 9 1/2x5 1/2 loaf pans. Grease pans. Line with wax paper, cutting corners to fit inside, but leaving at least two in. over outside of the pans.(no, they won't burn)

Pour batter into pans. Bake for 2 hrs. at 275*. When done, let cool for half an hr. or so. Lift from bread pans and peel wax paper off. May be wrapped in good tinfoil while still warm and frozen.

This is not as time consuming as it may appear. I have been making this for many years now and it goes really quickly. I also send several loaves to people in other state and it does ship well.
