Warm Spinach Salad

Ingredients

  • 4 cups packed spinach leaves
  • 1 hard-cooked and grated or sliced egg
  • 1/4 cup sliced roasted sweet red bell peppers (we used ready-made roasted peppers from a jar)
  • Honey Mushroom Dressing:
  • 1 tbl. chopped and cooked pancetta or prosciutto (may substitute cooked bacon)
  • 1/3 cup honey
  • 1/2 cup red wine vinegar
  • 3/4 cup canola oil
  • 1 cup sliced mushrooms

Instructions

Serves 6

. For the salad, divide the spinach among 6 serving plates. Sprinkle with the egg and roasted sweet peppers.

2. For the dressing, combine the pancetta (bacon), honey, vinegar and oil in a blender; process until smooth.

3. Pour the dressing over the mushrooms in a microwave-safe bowl. Microwave on full power until heated through
and starting to boil, about 2 minutes.

4. Spoon the hot mushrooms and dressing over the spinach, egg and peppers and serve immediately.
