Vanilla Buttercream Sandwich Cookies
Ingredients
- For the Cookie:
- 1/2 cup butter
- 1 cup sugar
- 1/2 cup oil
- 1 egg
- 1/8 tsp salt
- 1 tsp vanilla extract
- 2 1/2 cups all purpose flour
- 1 tsp cream of tartar
- 1 tsp baking soda
- For Buttercream:
- 1 cup butter, softened
- 1 (7oz) jar mashmallow creme
- 1 cup powdered sugar
- 1 tsp vanilla extract
- sprinkles to garnish sides of cookies
Instructions
Cream butter and sugar together in a mixing bowl; add oil, egg, salt and vanilla.
In a separate bowl, combine dry ingredients (flour, baking soda, cream of tartar.); add to butter mixture. Form dough into one inch balls and arrange on lightly greased baking sheets. Flatten each dough ball with fork. Bake at 350(F) for 8 to 10 minutes. Makes about 3 dozen.
Buttercream:
Beat butter until creamy; blend in marshmallow creme. Add sugar and vanilla. Beat until fluffy. Makes 3 cups.
To assemble the cookies - Take 2 cookies of the same size and spread buttercream generously in the middle and mash lightly together. The buttercream should moosh out the sides a bit:) Then sprinkle generously with sprinkles on the sides of the cookies:)
Note: When I baked these, they actually took longer than the 10 minutes. I think I baked them for about 12 minutes - your oven may vary. Also, I got about 2 dozen sandwiches out of this recipe and just enough buttercream. They look small when you put them out on the cookie sheet but they grow. I found them a way to sweet for me but Jamie's soccer team LOVED them.
