Two-Potato Mash
Ingredients
- 2 pounds sweet potatoes (about 2 large)
- 1 cup fat free sour cream, divided
- 1/4 cup packed brown sugar
- 1/4 cup butter, divided
- 1 teaspoon kosher salt, divided
- 1/4 teaspoon cinnamon
- 1 (22-ounce) bag frozen mashed potatoes
- 2-1/4 cups fat-free milk
- 1/2 teaspoon black pepper
Instructions
* Pierce sweet potatoes with a fork and arrange on paper towels in a microwave. Microwave on high for 12 minutes, or until tender, rearranging potatoes after 6 minutes. Let potatoes stand for 6 minutes.
* Peel potatoes and mash in a large bowl. Add 1/2 cup sour cream, sugar, 2 tablespoons butter, 1/2 teaspoon salt and cinnamon. Stir until blended. Cover with foil to keep warm.
* Heat frozen mashed potatoes in a large microwave-safe bowl according to package directions, omitting any added salt or fat. Add milk, remaining sour cream, butter, salt and pepper. Stir to combine.
* Spoon sweet potato mixture over mashed potatoes, swirling with a spoon. To get a marbling effect, don't blend completely.
Makes 12 servings.
