Tuna Tomato Casserole
Ingredients
- 1 box pasta shells
- 2 cans tuna
- 2 ½ cup sour cream
- 2 Cans tomato sauce -- (15 oz.)
- 2 Tabsp olive oil
- 2 carrots -- chopped
- 1 onion -- chopped
- 3 cloves garlic -- chopped
- 1 Tab. Italian Seasoning
- 1 ½ cups of mixed cheddar and parmesan cheese (shredded)
Instructions
Cook pasta according to directions. Just before draining, remove 1 cup of the cooking water and mix with sour cream. Set aside. Drain Pasta.
In pan you cooked pasta, heat oil.
Saute carrots, onion and garlic over medium heat until softened.
Add tomato sauce and tuna and cook for 5 minutes to let flavors marry.
Stir in sour cream mixture and pasta.
Pour into 9x13 casserole dish and cover with foil.
Bake at 400 degrees for 15 minutes.
Remove foil and top with cheeses.
Bake 5 minutes more to melt the cheese.
