In a medium bowl, mix all ingredients.

Yield: 1½ cups marinade.

Note: To toast whole cumin seeds, spread a single layer of seeds in a small skillet over low heat. Shake the skillet constantly until the seeds release their aroma and just begin to smoke; don't allow them to burn. Immediately take seeds off the heat and grind in a spice mill or electric mini chopper. Then measure out the amount of ground cumin needed for the recipe.
