Supreme Stuffed Green Peppers

Ingredients

  • 4 very large green peppers
  • 3 Tbs onions,minced
  • 1 lb lean ground beef
  • 1/2 to 1 cup of cooked rice
  • pepper to taste
  • 2-8 oz. cans tomato sauce
  • 1/4 cup of sherry wine
  • 1/2 cup of sourcream
  • 1/4 cup grated sharp cheddar cheese

Instructions

Preheat oven to 350 degrees. Wash peppers and remove stems and seeds. Brown the ground beef, drain off fat. Add in onion and season to taste with pepper. Add rice and one can of tomato sauce. Fill peppers and place in baking dish large enough only to hold peppers.
Combine sourcream, sherry, and remaining can of tomato sauce. Mix and pour over peppers. Bake 45 - 60 minutes or until peppers are tender. Sprinkle with grated cheese and continue baking until cheese is melted.


Note: You can add in some minced garlic with the onion. You can also add a bit of chopped mushrooms if you like. Also sprinkle the meat mixture with a bit of Lawry's seasoned salt and some ground chipotle pepper to perk up the flavor.
