Super Bowl Chili
Ingredients
- 1 lb. bag of frozen corn
- 1 14.5 ounce can of diced tomatoes
- 1 cup red wine or dark beer
- 2 tablespoons brown sugar
- 2 tablespoons paprika
- 4 tablespoons cumin
- 2 tablespoons chili powder
- 1 lb. bag of frozen pearl onions
- 1 teaspoon kosher salt
- 1 tablespoon oil
- 1 lb. diced beef, about 2 cups
- 1 19-oz. can cannelloni beans well drained and rinsed well
- 1 cup low sodium chicken broth
Instructions
Heat oil on high heat until it just starts to smoke.
Carefully add in the diced beef. Spread meat out a bit. Let brown for 3 minutes and then carefully mix a little. Keep searing for 3 minutes more.
Next mix in the frozen pearl onions and cook for 2 more minutes. Then add in the spices and brown sugar and mix well. Cook spices for 1 minute and deglaze with the red wine.
Reduce until almost dry. Then pour in the dice tomatoes, corn, and chicken broth. Bring to a boil and simmer for 1 minute and add in the rinsed, drained beans. Return to a low simmer, cover and cook for 15 minutes.
Check chili and add ½ cup to 1 cup water if it is getting to dry. Return to a simmer and cover and cook for 30 minutes
