Sungold Coconut Cake (my Great Grandma Fry's recipe)
Ingredients
- 2 cups sugar
- 1 cup butter
- 4 eggs (separated)
- 1 cup coconut milk
- 3 cups pastry flour
- 3 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp salt
Instructions
Beat the butter and sugar to a smooth cream. Stir in the well-beaten egg yolks and beat until very light. Sift dry ingredients together 3 times and add alternately with milk to the 1st mixture. Add vanilla and carefully fold in the whites of the eggs which have been beaten to a stiff froth. Bake at 350(F).
This was my Great-Grandma Fry's (Daddy's side) recipe. She made it every year for the Presbyterian church in Lake Village, Indiana to auction off:) She also baked it for Christmas presents. People would often ask her for the recipe but she'd never give it away:) One of her secrets was that she used fresh coconut milk.
