Spinach Casserole

Ingredients

  • 1 med. onion, chopped and sauted in 1/2 stick butter until soft and golden
  • 1 10 oz. pk. frozen spinach, thawed, drained and squeezed of half the water
  • 1 16 oz. container cottage cheese
  • 8 oz. shredded sharp cheddar cheese
  • 3 eggs beaten

Instructions

Salt and pepper not in original recipe but you do need some salt. Add to taste.

Mix all together and place in buttered 2 qt. casserole.
Bake at 350 for 45 minutes.

You won't even know you are eating frozen spinach. This is really good!
