Spanish Rice

Ingredients

  • 1lb lean ground beef
  • 1 green pepper, chopped
  • 1 small onion, chopped
  • 1/2 cup water
  • 2 green onions, chopped
  • 1 28oz can of diced tomatoes (with juice)
  • 1 tsp parsley
  • 1 tsp paprika
  • 1 garlic clove, chopped
  • 1/4 tsp salt
  • 1 tsp worchestershire sauce
  • 1 cup rice (NOT minute rice)
  • 1 tsp hot sauce
  • salt & pepper

Instructions

Combine beef, onions, parsley, garlic, worchestershire sauce, hot sauce and salt & pepper. Brown in large skillet with 1 tbsp oil.

Add remaining ingredients, bring to a boil, reduce to medium-low heat and simmer for 25-30 mins. Serve.

NOTE: If you like spicy foods, add additional hot sauce and cut up 2-3 red chilli peppers!
