Southern Velvet Cake

Instructions
Preheat oven to 350 degrees. Lightly oil and flour cake pans ( 2 or 3 - 9 inch cake pans).
In large bowl, sift flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, whisk oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
Using a standing mixer, mix dry ingredients into wet ingredients gradually until just combined and batter is smooth.
Divide batter into cake pans. Place pans in oven and bake until cakes are done and pull away from the pans - about 30 minutes.
Remove cakes from oven and allow to cool completely.
Prepare frosting: Cream Cheese Frosting
1 lb cream cheese, softened
2 sticks of unsalted butter, softened
4 cups confectioners sugar
1 tsp vanilla extract
Beat cream cheese, butter, and confetioners' sugar with mixer until smooth, about 5 minutes. Add vanilla, raise speed of mixer to high and mix until fluffy.
Spread frosting in between layers. Top cake with frosting and spread around sides. Sprinkle top with chopped pecans.
Watch this disappear. DELICIOUS and pretty easy to create.
