Southern Banana Nut Bread

Instructions

In a mixing bowl, cream shortening & sugar; beat in eggs. Blend in bananas & vanilla. Add flour alternately with buttermilk. Fold in pecans. Pour into two greased 8x4x2 loaf pans. Bake at 350º for 45-55 min or until a toothpick inserted near the center comes out clean. Cool in pan for 10 min before removing to a wire rack; cool completely.

For topping, combine bananas, sugar & lemon juice; spread over loaves. Sprinkle with pecans.

Yield: 2 loaves

Editors Note:As a substitute for each cup of self-rising flour, place 1 1/2 tsp baking powder & 1/2 tsp salt in a measuring cup; add all-purpose flour to equal 1c.
