Smothered Pork Chops

Season pork chops to taste with salt and pepper. Lightly dust with flour. Heat oil in heavy non-stick skillet. Fry chops until golden brown on both sides. Remove chops from pan and keep warm. Add onion and garlic to skillet drippings and saute until tender. Stir in 1 t. flour and brown. Return chops to pan. Add water to cover chops, approx. 3 cups. Add parsley, thyme and bay leaf. Simmer, uncovered, over low heat until chops are tender, about 30-40 min. Remove chops to plate. Reduce sauce in skillet to desired consistency. Taste again - adjust seasonings. Serve over chops. Note: you can add cabbage and simmer together with chops. You can add creole seasoning for a different version.
