Six-Layer Mediterranean Dip
Ingredients
- 1/2 cup low-fat sour cream
- 1 (7-oz.) container roasted red pepper hummus (See note.)
- 1/2 cup sliced ripe olives
- 4 ozs. feta cheese, crumbled (1 cup)
- 1 (6-oz.) jar marinated artichoke hearts, drained and chopped
- 2 chopped green onions
- 1/2 cup shredded carrots
- Pita chips
Instructions
1. Mix sour cream and hummus. Spread first layer on a 10-inch platter.
2. Sprinkle with olives, feta cheese, drained and chopped artichoke hearts, green onions and carrots.
Note: The hummus can be found on the international foods aisle in most supermarkets. This fits on a 10-inch platter, but it can easily be doubled.
Purchased pita chips can be used or you can make your own.
To bake pitas into chips:
1. Heat oven to 375 degrees.
2. Split pita bread in half horizontally.
3. Cut each half into four wedges.
4. Place on ungreased cookie sheets.
5. Bake 8 minutes at 375 degrees or until crisp.
6. Can be served as warm or cool chips.
