Shopping Soup
Ingredients
- 1/2 tsp. minced garlic
- 1 onion, chopped
- 3 stalks celery, chopped
- 2 (14 1/2-oz.) cans asparagus, drained (reserve 1/4 cup liquid)
- 4 red potatoes, washed but unpeeled, cut into cubes
- 4 cups half-and-half
- 1/2 tsp. hot sauce
- 1/2 tsp. ground black pepper
Instructions
If you have any of those shop-til-you-drop expeditions on your schedule, put your slow cooker to work on dinner while you're out dealing with the traffic and crowds. Even better, if you have a breadmaker set it so you'll have a loaf of lovely warm bread waiting to go with the soup upon arrival:)
1. Wash red potatoes; leave skin on and cut into cubes. Put into slow cooker.
2. Add asparagus and reserved 1/4 cup liquid. Add onion, celery, garlic, half-and-half and hot sauce. Mix well. Sprinkle ground black pepper over all.
3. Cook on Low for 4 hours and serve.
Serves 4-6.
