Samhain Cakes
Ingredients
- 1/2 cup vegetable oil
- 1 cup icing sugar
- 2 cup sugar
- 4 squares unsweetend chocolate, melted
- 4 eggs
- 2 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
Mix oil, melted chocolate and sguar. Add eggs, one at a time, until well-blended, then add vanilla. Stir in flour, baking powder and salt.
Chill at least 3 hours (or overnight).
Roll about 1 tbsp dough into a ball and place 2" apart on a well-greased baking sheet. Sift icing sugar over top and bake at 350F for about 10 mins.
They will be soft, not mushy but with firm edges. Let cool several minutes before removing to a cooling rack.
NOTE: These are traditionally a now-Halloween treat, but originate from the celtic Summer's end festival normally on Nov 1 (Samhain is actually pronounced "Sa-win").
