Rose's Weeknight Casserole

Instructions
1. Boil macaroni or spaghetti according to package directions, drain and lightly rinse and set aside.
2. Brown ground beef, skim off fat. Add chopped onions, bell pepper and celery. Cook until vegetables are soft. Add chopped tomatoes and juice and cream of tomato soup. Simmer for 10-15 minutes.
3. Add olives, black beans and corn. Season with salt and pepper. Add chili powder, if desired. Add parsley and green onions. Simmer 2 or 3 minutes. Stir in cooked macaroni or spaghetti.
4. Lightly spray 9x13-inch casserole dish with nonstick vegetable cooking spray. Layer half of the macaroni mixture in bottom, top with half of the cheese. Add remaining macaroni mixture and top with remaining cheese.
5. Bake in preheated 350-degree oven for 35-45 minutes or until bubbly
