Roasted Veggie Wraps w/ Garlic Mayo

Ingredients

  • 1 med green pepper, cubed
  • 1 med red pepper, cubed
  • 1 med red onion, 1/2 inch wedges
  • 1 med zucchini, cut into 1/4 in. slices
  • 1 med yellow squash, into 1/4 in. slices
  • 2 cups quartered mushrooms
  • 3 tbsp olive oil
  • 1/2 tsp dry basil
  • Salt & Pepper
  • Garlic Mayo:
  • 1/4 cup mayo
  • 1 tbsp finely chopped parsley
  • 1 tsp (or more) chopped garlic
  • 6 plain or whole wheat tortillas, warmed as directed

Instructions

Heat oven to 450*.

Put veggies, oil, basil, salt and pepper in a jelly-roll pan; toss to mix and coat.

Bake 12-15 minutes or until crisp-tender.

Meanwhile, stir garlic mayo ingredients in a small bowl until blended.

Spread mayo on each tortilla, top with roasted veggies in center and fold tortilla. ENJOY.
