Roasted Red Pepper Soup

Ingredients

  • Two 27 & 1/2 cans roasted red peppers
  • 1/2 can chipolte peppers
  • 1 & 1/2 pints heavy cream
  • 1 medium onion, chopped and sauted
  • 1 tsp. chopped garlic
  • 1 tsp. ground cumin
  • 3 Cups shredded cheddar cheese

Instructions

In blender, add all ingredients (except cheese) and puree. In medium-sized pot, pour in blender contents and add cheese.
Bring to a boil. Turn down heat to simmer for about 15 minutes, stirring occasionally
Serve with a grilled cheese sandwich or croutons. Serves 6.
