River Market Crispy Corn Fritters
Ingredients
- 1 cup shredded smoked mozzarella cheese
- 1 cup fresh corn kernels
- 1 egg
- 2 tablespoon butter, melted
- 1/2 cup milk
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoon sugar
- 1/2 cup cornmeal
- 3/4 cup all purpose flour
- 4 ounce jalapenos, chopped fine
- 1/4 chopped scallions
- vegetable oil for frying
Instructions
Mix together the flour, cornmeal, sugar, baking powder, and salt.
Whisk in the milk, melted butter, and the egg.
Fold in the corn, cheese, jalapenos, and the scallions.
Heat a thin layer of vegetable oil in a large skillet.
Ladle corn fritter in a this layer like pancakes.
Cook on the first side for 2-3 minutes or until brown and crispy.
Flip and cook for another 2 minutes on the opposite side. transfer to a paper towel lined plate to drain.
Repeat until all of the batter has been used.
Serve warm.
