Rice O'Brien
Ingredients
- small tin of choped black olives
- 1 - 2 oz jar of pimentos
- 1 can cream of mushroom soup
- 3 cups cooked rice (cooked in chicken broth)
- 1 onion (chopped)
- bellpepper (seeded and chopped)
- butter
Instructions
Cook your rice in chicken broth. You want 3 cups cooked. I use my trusty rice cooker (Perfect rice every time!:) But if you do it in a pot make sure you drain it well after it's done and return it to you pot.
Meanwhile, in a skillet sautee onion and bellpepperin butter til onions are translucent.
Mix into the rice, cream of mushroom soup (no water added), onions and bellpepper, and pimentos. Warm through and serve. You can sprinkle a little chopped green onion onto it before you serve (if you like).
