Rice Dressing
Ingredients
- 1 lb. roll of hot pork sausage
- 2 large onions, chopped
- 4 ribs celery, chopped
- Worcestershire Sauce
- Poultry seasoning or savory seasoning
- Salt and pepper
- Accent
- 3 small or 2 large pistolettes or 14-inch piece of good New Orleans French Bread
- 3 cups cooked rice
- Green onions and parsley
Instructions
1. Brown sausage, drain and blot.
2. Sauté onions and celery in same skillet until soft.
3. Stir the browned sausage back into the vegetables and add seasonings to taste. Simmer to blend seasonings.
4. Tear pistolettes or French bread into pieces and soak in salted water for a few minutes. Remove and squeeze out liquid. Stir moistened bread into the sausage and veggie mixture.
5. Stir in rice. Don’t use too much so it won’t be too dry.
6. Taste to adjust seasonings.
7. Chop desired amount of green onions and parsley and garnish the top of the dressing.
8. If you need to reheat the dressing for serving, put it in a microwave-safe dish and microwave just enough to heat through.
