Pumpkin Cookies
Ingredients
- 1 cup C and H Golden Brown Sugar, firmly packed
- 1 cup cooked or canned pumpkin
- 1/2 cup oil
- 1 teaspoon vanilla
- 2 cups sifted all-purpose flour
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 cup raisins
- 1/2 cup chopped nuts
Instructions
In mixing bowl, beat together sugar, pumpkin, oil and vanilla. Sift together
dry ingredients; add and stir until smooth. Blend in raisins and nuts. Drop by spoonfuls on greased baking sheet. Bake at 350 degrees for 12 to 15 minutes.
Makes 3 to 4 dozen.
No eggs needed in these moist, soft cookies.
A friend gave me this cookie recipe years ago, 1970's. This is the only
pumpkin cookie recipe, I have used.
