Potato Skins

I make these and my husband gobbles them up!
Scrub your potatoes really well and place them (without foil) into your oven at 400 degrees. Let them back anywhere from 1 1/2 hours to 2 hours (depending on size, smaller would be, of course, 1 1/2).
Remove them from the oven and you can let cool for a few minutes so you dont burn your hands. cut them open, longways. I like to keep a good bit of potato in there so I may scoop a little out and then just moosh down the rest making it a smooth bottom. If I have sautee'd mushrooms, I put those in first, then grated or sliced cheese, crumble a bit of bacon over it then sprinkle some green onion on it. Run it under the broiler until the cheese is nice and melted (and gooey:) Serve with a side of sour cream or add a dollop to the top of each:) Enjoy!!
