Picnic Cupcakes
Ingredients
- 2 sticks of butter or margarine
- 4 oz semi sweet chocolate squares (4 - 1 oz squares)
- 2 cups chopped pecans
- 1 3/4 cups sugar
- 1 cup all purpose flour
- 4 eggs lightly beaten
- 1 tsp vanilla
Instructions
Preheat oven to 325 degrees.
Grease muffin tins or fill with paper muffin cups.
In saucepan over low heat, melt butter with chocolate squares. Stir once melting begins until all is blended and melted. Stir in chopped pecans and remove from heat.
In a medium mixing bowl, combine flour, sugar, eggs, and vanilla. Stir - don't beat. Add chocolate mixture a little at a time until all is incorporated into flour mixture. Fill muffin cups 2/3 full.
Bake at 325 degrees from 25 minutes.
Makes about 18 cupcakes.
