Petites Pralines
Ingredients
- 2 cups white sugar
- 2 cups light brown sugar
- 1 cup evaporated milk
- 3 T butter
- 2 cups perfect pecan halves
- 1 tsp vanilla
Instructions
Makes 8 doz.
Dissolve sugars in milk and brint to a boil over medium heat. Continue cooking, stirring occasionally, until mixture registers 228(F) on a candy thermometer. Stir in butter, pecans, and vanilla. Continue cooking, stirring constantly, until mixture reaches 236(F) to 238(F). Cool without stirring for minutes. Beat with a wooden spoon until slightly thickened and candy coats pecans but does not lose it's gloss. Working quickly and using a tsp, pick out 1 pecan half at a time and drop onto waxed paper that has been spread over newspapers. When the mixture begins to thicken, it may be gently reheated to thin.
