Pesto Broiled Tomatoes
Ingredients
Instructions
1. Trim the ends from the tomatoes and cut them in half lengthwise.
2. Brush tomatoes with olive oil and lightly season with salt and pepper.
3. Place tomatoes, cut side up, on a broiler pan. Spoon the prepared pesto on the tops of the tomato halves and then sprinkle with Parmesan cheese.
4. Place under broiler (on the first or second shelf) and broil until tops begin to bubble, about 4-5 minutes.
