Pepperjelly
Ingredients
- 1tsp. unsalted butter
- 3 1/4 c. sugar
- 1c. Red wine vinegar
- 2t. Crushed red pepper
- 3 red bell peppers
- 2 packs pectin (no sugar added)
- 1t. Salt
Instructions
Pulse red bell pepper's & crushed red pepper. In separate bowl mix pectin & 1/4c. sugar - set aside. Stir pepper mix, vinegar, butter, salt & 3 cups remaining sugar. Bring to boil over high heat. Remove and gradually add pectin mix whisking constantly. Return to boil (1-2) min - pepperjelly should be desired consistency - add your favorite shrimp/chicken/pork or whatever you desire. Remember the key to this dish is caramelization. It's good to just pour over, but it's even better if you can add it to what your cooking a few minutes before completion.
