Peanut Butter & Jelly Football Bars
Ingredients
- 1 cup firmly packed brown sugar
- 3/4 cup Butter Flavor Crisco All-Vegetable Shortening, plus additional for greasing
- 1/2 cup creamy peanut butter
- 2 cups plus 2 tbls. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 cups oats (quick, uncooked)
- 1/3 cup water
- 1 cup strawberry preserves
- Football-shaped cookie cutter
- White icing for decorating
Instructions
Makes 1 dozen football bars.
1. Preheat oven to 400 degrees. Grease a 13x9x2-inch pan with shortening.
2. In a large bowl, combine brown sugar, shortening and peanut butter. Beat on medium speed of an electric mixer until well blended. Set aside.
3. In a small bowl, combine flour, salt and baking soda. Gradually add to creamed mixture at low speed. Beat until well blended. Stir in oats with a spoon and mix until well blended. Stir in water 1 tablespoon at a time.
4. Press half the dough into the bottom of greased pan and evenly spread strawberry preserves on top. Flatten small amounts of the remaining dough between hands. Place on preserves and arrange so dough sections touch. Fill in any spaces with additional dough
until preserves are completely covered.
5. Bake for 15-20 minutes or until edges are slightly brown. Do not overbake.
6. Use a football-shaped cookie cutter to cut bars while still warm. Place on a baking rack to cool. When footballs are completely cooled, use white icing to decorate, adding laces or your favorite team’s name.
