Patty's Old-Fashioned Apricot Pie

Instructions

* Heat oven to 425.

* Prepare pie crusts (see above recipe) and line the bottom of a 9-inch pie pan. Reserve top crust and set aside.

* Mix sugar, flour and cinnamon together in a large bowl and stir in apricots, lemon juice, tossing to coat. Pour into bottom pie crust and dot butter.

* Cover with top crust, make slits for ventilation and flute. Sprinkle with sugar if desired. Cover edges with foil, removing last 15 minutes for even baking.

* Bake until crust is brown and juice bubbles through slits in crust, about 35 to 40 minutes. Makes sure pie bubbles before removing from oven.

* Makes 1 (9-inch) pie with 8 slices.
