Pan Fried Eggplant

Instructions
Wash eggplant, but do not peel. Slice 1/4 inch thick. Sprinkle slices with salt and pepper and dust with flour. Beat egg and water and pour into a flat dish. Dip eggplant slices in beaten egg and dip again in flour. Saut/ quickly in hot cooking oil until golden brown on both sides. Serves 2.
