Olive Salad

Ingredients

  • 1 lb. green olives, pits removed
  • 1 rib celery, diced
  • 1 bunch green onions, chopped
  • 1 bunch parsley, chopped to make 1 cup
  • 6 cloves garlic, chopped
  • 1/4 cup capers
  • 1 bell pepper, chopped
  • 1/2 tsp. black pepper, freshly ground
  • 1/2 cup vinegar
  • 1/4 cup olive oil

Instructions

1. Mash olives and remove seeds.

2. Mix all ingredients together and let stand at least 1 hour before serving.

Makes 1 quart. Recipe from "Louisiana's Italians, Food, Recipes, & Folkways."
