Oktoberfest Casserole

Ingredients

  • 1 can sauerkraut , drained
  • 1/4 cup Thousand Island dressing
  • 1 lb. smoked sausage
  • 8 - 10 rye crisp crackers, crumbled
  • 2 T butter, melted
  • 2 - 3 tomatoes, sliced
  • 3 cups Swiss cheese, shredded
  • 1/4 t. caraway seed

Instructions

Spread sauerkraut in the bottom of casserole. Top with sliced tomatoes. Dot with dressing. Cover with 2 -3 inch sausage pieces split lengthwise to lie flat. Top with cheese. Mix cracker crumbs, butter and caraway seed. Sprinkle on top of casserole. Bake at 425 degrees for 20 - 25 minutes.
