Noodle Kugel
Ingredients
- Butter (for the dish)
- Salt, to taste
- 1 pound wide egg noodles
- 1 1/2 cups whole milk
- 1 cup sour cream
- 1 cup cottage cheese (preferably 4 percent milk fat)
- 1/2 cup granulated sugar
- 4 eggs, lightly beaten
- 1 teaspoon vanilla extract
- Grated rind of 1 orange
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup coarsely crushed cornflakes
- 3 tablespoons unsalted butter, cut into small pieces
Instructions
Assemble this noodle pudding, filled with sour cream and cottage cheese, up to two days ahead. Bake it right before serving.
1. Set the oven at 350 degrees. Butter a 9-by-13-inch baking dish.
2. Bring a large pot of salted water to a boil. Add the noodles. Cook, stirring occasionally, for 8 minutes or until the noodles are just tender (they'll cook more later). Drain into a colander, rinse with cool water, and transfer to a bowl.
3. In another bowl, stir together the milk, sour cream, cottage cheese, sugar, eggs, vanilla, orange rind, 1/2 teaspoon of the cinnamon, salt, and pepper.
4. Pour the cottage cheese mixture over the noodles and toss gently but thoroughly. Transfer to the baking dish.
5. Sprinkle with the remaining 1/2 teaspoon cinnamon, cornflakes, and butter.
6. Bake the kugel for 50 to 60 minutes or until it bubbles around the sides and the top is golden. Let it sit for 10 minutes, then cut into squares. -
