My Dearest Hope: I saw a request in the department for canning sweet potatoes. I have canned them successfully by washing clean, parboiling until done, removing jackets and packing in jars. Process them 45 minutes at 15 pounds pressure.
I also want to send in a good recipe for muffins which I think are very quickly made and are economical lunch for school children, harvest and threshing hands.
Cream 4 tablespoons of shortening. Add 1 cup sugar and 1 egg, well beaten; Add 1/2 cup milk slowly. Sift together 3 times 1 3/4 cups flour, 3 tsp baking powder, 1/2 cup cocoa, 1/4 tsp salt, 1 tsp vanilla. All measurements should be level.
Bake in a moderate oven until done.
