Monster Cookies
Ingredients
- 1/2 cup butter or margarine softened
- 1 cup sugar
- 1 cup plus 2 tablespoons firmly packed brown sugar
- 3 eggs
- 2 cups peanut butter
- 3/4 teaspoon light corn syrup
- 1/4 teaspoon vanilla extract
- 4 1/2 cups regular oats uncooked
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 cup candy-coated milk chocolate pieces
- 1 package semisweet (6-ounce) chocolate morsels
Instructions
Cream butter; gradually add sugars. Beat well at medium speed of an electric mixer. Add eggs, peanut butter, syrup, and vanilla; beat well. Add oats, soda, and salt; stir well. Stir in remaining ingredients. (Dough will be stiff.)
Pack dough into a 1/4-cup measure. Drop dough 4 inches apart, onto lightly greased cookie sheets. Lightly press each cookie into a 3-1/2-inch circle with fingertips. Bake at 350 degrees for 12 to 15 minutes (centers of cookies will be slightly soft). Cool slightly on cookie sheets; remove to wire racks, and cool completely. Yield: 2-1/2 dozen.
NOTE: Make Monster Cookies and you'll be famous. They contain almost all the ingredients reputed to make a good cookie--oats, peanut butter, and chocolate. More stunning than that is their size--they're dropped from 1/4-cup measures rather than teaspoons.
The recipe makes only 2-1/2 dozen, but they're big!
