Mom’s Escalloped Potatoes

Ingredients

  • 2 lbs frozen hash brown potatoes
  • 1/2 cup margarine, melted
  • 1 t salt
  • 1 t pepper
  • 1 can cream of chicken soup
  • 2 cups cheddar cheese, grated
  • 1/2 cup onion, chopped
  • 2 cups sour cream
  • 2 cups corn flakes-crushed and mixed with 1/4 cup margarine melted

Instructions

Thaw potatoes and combine with other ingredients, except for cornflake mixture.

Place in 3 quart casserole or large flat casserole dish and sprinkle top with corn flake mixture.

Bake at 350 degrees for about 45 minutes. Bake 1 1/2 hours if coming from freezer.
