Molded Cranberry Relish

Ingredients

  • 2 cup raw cranberries, ground
  • 2 whole oranges
  • 1 cup crushed pineapple, drained
  • 1 envelope unflavored gelatin
  • pineapple syrup with water added to equal 1 cup liquid
  • 1 1/2 cup sugar
  • 1 cup pecans
  • 1 pkg strawberry gelatin
  • 1/2 cup cold water

Instructions

Mix ground cranberries with sugar in top of double boiler and cook until sugar is well melted. Grind oranges and pecans and mix with pineapple. Bring to a boil the cup of pineapple syrup and water and pour over strawberry gelatin, stirring to dissolve. Dissolve envelope of unflavored gelatin in the 1/2 cup cold water. Mix all ingredients together and pour into greased mold. Chill until set. unmold and garnish with parsley. Serve with meat in place of cranberry sauce.
