Brown meat in salad oil. Add vegetables, broth and soy sauce; cover and cook over low heat for 10 minutes or until vegetables are just tender, stirring often. Combine water and cornstarch; add to the meat mixture, stirring until thickened. Serve over hot rice. Makes 4 - 6 servings.
