Mock Lasagna
Ingredients
- 8 ozs. spaghetti (about 3/4 of the pkg)
- 2 tbls. butter
- 1/2 cup grated Parmesan cheese
- 2 eggs, well beaten
- 1 lb. lean ground beef
- 1/2 cup chopped onion
- 1 small bell pepper
- 1 rib celery, chopped
- 1 or 2 cloves garlic, minced
- 1 (16-oz.) jar of prepared Italian-style spaghetti or marinara sauce
- 1 tsp. sugar
- Pinch of oregano and dried basil
- 1 (12-oz.) carton cottage cheese
- 1/2 cup shredded mozzarella cheese
Instructions
This casserole can be frozen.
Serves 6-8
1. Cook pasta according to package directions. Drain, then stir in butter and Parmesan cheese. Slowly add the beaten eggs. Mix, then spoon into the bottom of an 8x11-inch baking dish. Using a spoon, lightly press to form an even layer on the bottom of the dish.
2. Brown ground beef until no longer pink. Pour off all fat and add onion, bell pepper, celery and garlic. Add the spaghetti or marinara sauce. Add sugar, oregano and basil and simmer, uncovered, over low heat, for about 20-30 minutes or until vegetables are tender and sauce is slightly thickened.
3. Spread cottage cheese over spaghetti layer. Top with ground beef and spaghetti sauce mixture.
4. Bake in preheated 350-degree oven for 20 minutes. Remove from oven and sprinkle mozzarella on top. Return to oven and continue baking for additional 10 minutes or until cheese is melted.
