Mexican Cheese Squares
Ingredients
- 2 (4-oz.) cans chopped green chilies, drained well
- 2 eggs, beaten
- 6 ozs. Monterey Jack cheese, grated
- 6 ozs. Cheddar cheese, grated
- 1/2 cup sour cream
- Paprika, optional
Instructions
1. Place drained chilies in bottom of a greased 7x10-inch pan.
2. Mix beaten eggs with grated cheeses and sour cream and spoon mixture over chilies carefully and smooth out.
3. If desired, dust paprika over top prior to baking. Bake at 350 degrees for 30 minutes. Cut into small squares to serve.
Recipe can be doubled and can be frozen, but it's better freshly prepared.
Also, you can substitute 12 ounces of grated Mexican Style Cheddar Jack with Jalapeño Peppers Cheese Blend for the two cheeses in the recipe. This gives a spicier taste to squares.
