Maya Angelou's Buttermilk Biscuits

Preheat the oven to 375 degrees.

In a large bowl sift together the flour, salt, baking powder and baking soda.

Cut in the lard until mixture resembles coarse cornmeal.

Add the buttermilk and stir until the dough leaves the side of the bowl.

Turn the dough out onto a lightly floured work surface and knead until it's smooth. Roll it out to 1/2-inch thickness and cut into 2-inch rounds. If there is no biscuit cutter on hand, use a water glass. (Turn the glass upside down, dust the rim in flour and cut the biscuits.)
