Lucille’s Stew
Ingredients
Instructions
1. Trim and cut round steak into manageable pieces.
2. Brown meat in pot that has been sprayed with cooking spray. Remove meat from pot.
3. Wilt onions and garlic. Add tomato paste, tomato sauce, roux, sugar, salt and pepper and hot water. Mix well.
4. Add browned meat and simmer on low fire until meat is tender.
5. Wash okra leaving caps on. Add okra to pot and cook about 20 minutes or until okra is tender. Serve over cooked rice.
Serves 6
This is extra delicious when using fresh okra or snap beans.
