Lima Bean Soup
Ingredients
- 1 lb. dried large lima beans
- 1/2 lb. chopped ham or seasoning meat of choice
- 1 large onion, chopped
- 2 ribs celery, chopped
- 1 pod garlic, chopped
- 2 tbls. chopped parsley
- 1 large bay leaf
- 1/2 tsp. salt, or to taste
- 1/2 tsp. pepper, or to taste
- 6 cups water
Instructions
1. Rinse and sort lima beans.
2. Render meat in skillet over medium heat. Remove meat from skillet and place to the side. Sauté the onion, celery and garlic in the fat left in the skillet from the meat.
3. Pour the sautéed ingredients into a large soup pot, along with the rinsed beans, the meat, parsley, bay leaf, seasonings and water. Stir everything together, put top on soup pot and simmer over low heat for 2 hours or until the beans are tender.
4. Add water while cooking if necessary. Adjust seasoning to desired taste and remove bay leaf before serving.
