Lella's Pimento Cheese

Instructions
Blend grated cheese and pimientos in food processor until well-blended. Add mayonnaise as needed. Blend again; add other ingredients, blend.
(The pimento cheese is a solid color, and you cannot see the pimientos once blended.)
Note: Lella loved to use Pepperidge Farm very thinly sliced bread, both white and wheat. She would cut the crust off the bread and spread just a dab of mayonnaise on one slice of bread, and then thinly spread the pimento cheese on the other side. Put slices together, place on platter, covered with dampened tea towel until all sandwiches are made. Then wrap the platter with transparent wrap and refrigerate. Let set at room temperature a few minutes before serving.
