Klepto's Meatloaf

Ok, so my mom used to make meatloaf. And I of course, loved it, but it was, to say it nicely, bland?
So i went out and found a recipe that sounded good. To many of em out there have all this mixed meats, veal and such. But this one kicked ass, really. It's a big meal though. Anyways, enjoy. Make sure you cook it in the water bath too, it makes it so moist, my mom cooked without the water bath and it just wasn't the same.
I also imagine if you want it smaller you could half everything fairly simply.
Heat oil. Cook onions, celery, carrots, garlic, and thyme until very soft. Let cool.
Meanwhile, mix remaining ingredients well. Incorporate the cooked vegetables. Pack tightly in a 10-inch loaf pan and cook in a water bath for 1 hour in 400 degree oven.
Serve with your favorite gravy or tomato sauce recipe.
