John Wayne Casserole

Ingredients

  • 3 cups of Monteray Jack Cheese,shredded
  • 1/2 cup of milk
  • 3/4 cup white flour
  • 2 tablespoons of ground black pepper
  • 3 tablespoons of butter
  • 2 cloves of garlic,minced
  • 1 jalepeno pepper,minced
  • 2 green chilies
  • 1 large red bell pepper,chopped
  • 2 large onions,chopped
  • Extra: Add Ground Beef or Ground Chuck if you want meat
  • 2 teaspoons Dijon mustard
  • 3/4 cup tortilla chips
  • 32 ounces sour cream
  • 12 eggs

Instructions

1. Saute the chopped onions,green chilies and red pepper in the butter in a large
skillet until tender. Add the garlic and jalepeno pepper, saute a couple of minutes more. Remove from heat and set aside.
2. In a large mixing bowl put in 12 egg yolks, milk,flour and pepper, then add the sour cream,cheeses,tortilla chips and the now cooled vegetables and mix all together.
3. Beat the egg whites until they are stiff; fold into the mixture.
4. Pour the mixture into two 9x13 greased baking dishes and place in a preheated
ovven at 350º for approximately 1 hour. The dish is done when the top is a little crusty and starts to crack.
5. Serve with a little sour cream on the side sprinkled with chives and tomatoes, or some salsa.
